Omelette with mushrooms and cheese

Ingredients:

4 eggs
100 g thinly sliced mushrooms
50 g grated hard cheese (e.g. cheddar or gouda)
1 green onion, chopped
1 tbsp. olive oil
salt and pepper to taste
Preparation:

In a bowl, beat the eggs with a fork or whisk. Season with salt and pepper.
In a skillet, heat the olive oil over medium heat.
Place the mushrooms in the skillet and saute until golden, about 5-7 minutes.
Add the green onions and cook for another 1-2 minutes.
Pour the beaten eggs into the skillet. Stir until the omelet begins to curl around the edges.
Sprinkle the grated cheese over the surface of the omelet.
Serve the omelet immediately while it is hot and the cheese is melting.
